USA biotechnology company, Pureture, formerly known as Armored Fresh Technologies, has been committed to developing animal-free materials that function like animal protein. The company has now announced the launch of its plant-based casein. On a mission to better the environment and support those with dietary sensitivities and allergies, this launch aims to reshape the alternative dairy industry.
Casein, a key component in animal-based dairy products, is a milk protein that creates a stable emulsion, preventing fat and water from separating, giving milk its smooth texture. Pureture has successfully recreated casein using yeast-based, entirely plant-based materials that offer comparable functionality to milk, a better taste and nutrition panel, and sustainable and lower-priced ingredients.
With no taste, smell, or colour, Pureture's plant-based casein is a non-GMO protein designed to be used for cheeses and other alternative dairy products like milk and yogurt.
Operative aspects of cheese, like meltability and stretchiness, are often missing from vegan cheeses due to binding elements, limiting the protein added to vegan cheese. This ingredient replicates these essential functions; it was thoughtfully crafted to be cleaner than other alternatives and eliminates the need for starches, gums, and emulsifiers.
"At Pureture, we're laser-focused on developing materials and technologies for essential food changes that will provide us with a richer and long-lasting food culture," said Rudy Yoo, founder and CEO of Pureture.
"With this innovation, we're thrilled to introduce a product that ensures the joy of dairy flavour and texture remains while delivering a cleaner label and contributing to a more sustainable future."
Due to its proprietary technology and method of production, Pureture can price its casein at a lower cost than the market average. The brand plans to collaborate with significant dairy companies to co-brand its plant-based casein and partner with global ingredients vendors to expand its usage. Assisting corporations in transitioning to plant-based casein goes beyond the product and includes revolutionising label transparency. Pureture believes clean labels featuring unaltered and untouched proteins with plant-based alternatives are the future of food.
